SOS Tips: Stocking up for winter
If you don’t have a lot of time to prepare preserves this fall, try to at least prepare these two essentials:
The Fresh Tomato Base allows you to savour locally grown tomatoes year-round, saving you from having to buy the canned variety. Once prepared, you can pour this tomato purée into sterilized jars for storage, but I fiercely recommend that you freeze the base – it is much easier and faster.
The main reason to prepare Oven-Roasted Peppers in advance is to take advantage of the good prices as the harvest comes to an end – they are 10 times less expensive than in winter!
If you actually do have some time on your hands to prepare some more preserves (and enough space in your freezer!), here are some other recipes worth making in large batches and freezing:
- Creamed Cauliflower Soup with Cheese
- Red Pepper Ratatouille
- Classic Ratatouille
- Plum Compote
- Strawberry Ice Cream
- Ligurian Broccoli Soup
