Ingredients

2 cups green/snap beans   200 g
1 clove garlic, pressed  
2 tsp fresh tarragon, chopped   1 g
1 tbsp olive oil   15 mL
  salt to taste    
  ground pepper to taste    

Method

  1. Prepare the green beans and blanch them 7-8 min. Drain and shake out the water. Set aside.
  2. Heat the oil in a skillet, over medium heat. Add the beans and the pressed garlic. Sauté 2-3 min with stirring. Add the finely chopped tarragon. Cook an additional 1-2 min with stirring so that the beans are coated well with garlic and tarragon. Add salt and pepper.
  3. Serve warm.

Remarks

Be careful with the amount of fresh tarragon, since it may be overpowering.
