These were really good. I am not a fan of potatoes but my "better half" had been bugging me that he needed potatoes - so I conceded and made these. Well, they were so good that we were fighting over who got to have the leftovers....I won.;)
These were AWESOME!
Given the fact sweet potatoes are good for you and they tasted pretty good - I might make these again. Didn't use pine nuts (too expensive) and didn't use fresh Rosemary as I usually end up wasting a package of fresh herbs when it calls for "1 sprig" - used dried Rosemary instead.
