Beet and Green Apple Salad

The sweetness of beets and the tartness of green apples make a tasty combination in this nicely-coloured salad.

Ingredients

3 beetroots 380 g
1 apples, green, Granny Smith type 180 g
30 mL Classic Vinaigrette 2 tbsp
salt [optional]
ground pepper to taste [optional]

Method

  1. Prepare the beets: boil or steam them about 25-30 min. Let the beets cool down a few minutes, then peel them and dice into 1,5 cm pieces. Transfer the pieces to a salad bowl.
  2. Cut the apples into 1,5 cm cubes, without peeling them, but removing the core. Add the apples to the beets in the salad bowl.
  3. Pour in the Classic Vinaigrette, then season with salt and pepper. Toss well then serve.

Remarks

The beets may be cooked a few day in advance.

I'm not a big fan of beets when they are hot, and they are even worse when they are cold. The apples do help to make it palatable. Also, having an allergy to mustard, I finally gave up on the Classic Vinaigrette and just buy my own Gluten-Free Vegan Dressing to use.. so far I haven't found a way to make this really good short of sticking it in the toaster oven and heating it for a little bit.

I made the a different dressing, 1tbs lemon juice, 3 tbs olive oil, s&p, and 1/2 ts oregano. Very good combo with the beets, my hubby doesn't like mustard. I only used 1 green apple and 3 med sized beets.

Served this to a group of 250, yes, that is correct, 250. It worked out great. Nice taste, looked great (so colourful) and a lot of people went for seconds. Great for a hot summer night dinner and a great addition to a buffet for a large group. Nice one. And it's healthy...can't beat that!

Served this to a group of 250, yes, that is correct, 250. It worked out great. Nice taste, looked great (so colourful) and a lot of people went for seconds. Great for a hot summer night dinner and a great addition to a buffet for a large group. Nice one. And it's healthy...can't beat that!
