Bruschetta with Tomato

The traditional Italian "bruschetta" [pr. broo-SKEH-tah] is made with only 3 ingredients: bread, garlic and olive oil. Any kind of garnish can then be added on top of the bread.

Ingredients

1 slice bread   35 g
1/4 clove garlic    
1 tsp extra virgin olive oil   5 mL
1 tbsp canned tomatoes (diced)   16 g
1 tsp Parsley and Garlic Base (Recipe)   5 mL
  ground pepper to taste    

Method

  1. Preheat the grill to medium-high. Oil the rack.
  2. Brush the bread slices on both sides with oil then grill about 1 to 2 min on each side.
  3. Rub the grilled bread with garlic, then add the tomatoes and the Parsley and Garlic Base. Season with pepper and serve.
  4. As an alternative: Grill the bread in a toaster, then rub it with the garlic and drizzle with oil. Garnish and serve.
