Ingredients

  vegetable oil spray    
1 cup orange juice   250 mL
1 cup sugar   200 g
1/3 cup liquid fruit pectine   85 mL
4 tbsp honey   90 g
2 tsp lemon, juiced   1/4 lemon
1/4 tsp salt   1 g

Method

  1. Spray a 9"x5" pan with cooking spray.
  2. Blend sugar, orange juice, liquid pectin, honey, lemon juice, and salt in a pot. Bring to a boil on medium-high heat, whisking constantly. Reduce the heat and whisk continuously for 5 to 6 minutes.
  3. Pour the liquid mixture into the sprayed pan and let sit for 12 h.
  4. Turn the pan upside down so the entire gel mixture comes off the pan and then cut into 40 even cubes.
