Ingredients

2 Italian sausages, made with garlic and herbs 150 g
2 tsp Dijon mustard, plus extra for the bread 10 g
6 pitted prunes 3 1/2 tbsp
2 slices bacon 40 g
4 slices bread, whole wheat 140 g

Method

  1. Cut a long slit down the length of each sausage, about three-quarters of the way through its thickness.
  2. Spread the cut surface with the mustard, then place 3 prunes in each sausage, pressing them in firmly. Stretch out the bacon slices thinly lengthwise, then wrap one slice tightly around each of the sausages in a spiral, so that the bacon holds the prunes in the sausage.
  3. Cook the sausages on a hot grill or a heavy pan for 12-15 min, turning occasionally to brown them evenly.
  4. Serve immediately with bread and additional mustard.
