If I was to compare this to any of my "with gluten" diet recipes, I would say it is most like cream of wheat, especially if you use red quinoa, which I prefer to the usual white/yellow quinoa. For me the red quinoa is less bitter. The flax seed gives it a nuttiness which is also reminiscent of whole wheat. I like it.
