A very simple way to prepare okra, just a little bit spicy, oven-baked with olive oil.

260 g okra/lady's fingers
2 tbsp olive oil 30 mL
1 tsp curry powder 3 g
1 pinch salt [optional] 0.1 g
ground pepper to taste [optional]


  1. Preheat the oven to 205°C/400°F.
  2. In a large bowl, mix the oil, with curry, salt, and pepper. Add the okra and coat them well with the mixture. Transfer the vegetables to a baking sheet or an oven-proof dish. Don't crowd them or they will steam and not turn golden-brown.
  3. Bake in the center of the oven until nicely browned and tender, about 15 min, turning the pieces once.
  4. Serve.
