Ingredients

1 tsp paprika 3 g
1/4 tsp cayenne pepper 1 g
1/4 tsp dried oregano 0.2 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
1 clove garlic, cut into thin slivers
3 chicken wings 260 g
1 tsp olive oil 5 mL
1/4 limes 18 g

Method

  1. In a large bowl, combine the paprika, cayenne pepper, and oregano. Add salt and pepper to taste.
  2. Cut the garlic cloves into thin slivers. Using a small, sharp knife, make 2-3 small slits in the skin of each chicken wing and slide a garlic sliver under the skin. Brush the wings with olive oil, then add them to the bowl and toss until they are lightly coated with the mixture.
  3. Cook the chicken wings on a medium grill or in an oven under the broiler for about 15 min, until they are cooked through and the skins are golden and crisp.
  4. Serve with lime wedges.

Yum! I made this recipe a bit spicier, whizzed the spices in a grinder to them coat the wings better, and mixed the oil and spices in a bowl before dipping the wings in the spice-oil mix. Delicious!
