Ingredients

4 egg whites 1/2 cup
1 pinch salt 0.1 g
1 cup sugar 200 g
1 tsp cornstarch 3 g
2 tsp white vinegar 10 mL
1 cup whipping cream 35% 250 mL
2 cups blueberries, or other berries 260 g

Before you start

A hand-held or stand mixer will make things easier for this recipe.

Method

  1. Preheat the oven to 120ºC/250ºF. Line two large baking sheets (about 30 x 38 cm) with parchment paper. Using a 8 cm bowl, trace 6 circles on each sheet.
  2. In a large bowl, using a mixer, beat the egg whites and a pinch of salt until stiff peaks form. Add the sugar gradually, one tablespoon at a time then continue to whip at high speed until the mixture is glossy and the sugar is dissolved, about 5 min. In a small bowl, dissolve the cornstarch in the vinegar then add it to the egg whites.
  3. Using two spoons, scoop a mound of meringue in the center of each of the circles. Use the back of one spoon to create an indentation in the center of each mound.
  4. Bake in the middle of the oven until the meringues are firm and dry to the touch, lightly colored but not browned, 35 to 40 min. Turn off oven and let cool for 1 hour. Transfer to a wire rack to cool completely, an additional hour.
  5. When ready to serve, whisk the cream in a bowl until soft peaks form. Top meringues with a dollop of whipped cream and two spoonfuls of blueberries. Serve immediately.

Observations

Undressed pavlovas can be kept in an airtight container for up to 2 days.
