Pear Upside-Down Cake

Ingredients

3 tbsp margarine non-hydrogenated 1.5 oz
3/4 cup brown sugar 5.3 oz
1 cup white flour (all purpose) 4.6 oz
1 eggs size large
3/4 tsp baking soda 0.1 oz
1 1/4 tsp cream of tartar 0.2 oz
1/8 tsp salt
1/2 tsp vanilla extract 0.1 fl.oz
1/3 cup margarine non-hydrogenated 2.7 oz
1/2 cup sugar 3.9 oz

Method

  1. Preheat the oven to 350°F.
  2. In a 20 cm (8 inch) square cake pan melt 3 tablespoons of margarine with the brown sugar.
  3. Drain the pears and slice them in sections and spread them on the margarine and brown sugar mixture.
  4. Sift the flour, baking soda, cream of tartar and the salt.
  5. Cream the remaining margarine and incorporate the sugar and egg.
  6. Mix the vanilla in the remaining 2⁄3 cup of pear juice.
  7. Add the flour mixture into the margarine mixture alternating with the liquid. Mix well.
  8. Spread the dough onto the pears.
  9. Bake in the oven at 350°F for 35 minutes. Let cool for 5 minutes and invert onto a serving plate.
