Ingredients

1 1/2 tbsp butter, unsalted 20 g
1 shallots, finely chopped 40 g
3 cups green kidney / flageolet beans (canned), drained and rinsed 750 mL
1 tbsp curry powder 9 g
1 1/2 cup vegetable broth 375 mL
1 1/2 cup water 375 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
4 tsp cream 15% [optional] 20 mL
4 panino rolls 400 g
4 eggs size large, boiled, sliced, for the panini
2 green onions/scallions, thinly sliced, for the panini
2 stalks celery, finely chopped, pour le panini 140 g
4 tsp mayonnaise, for the panini 18 g
1 cup baby spinach, for the panini 18 g

Before you start

A blender or food processor will be very useful to purée the soup.

Method

Soup:

  1. Melt the butter in a saucepan over medium-low heat. Add the finely chopped shallot and sauté 2-3 min until translucent, taking care not to let it burn.
  2. Drain and rinse the flageolet beans, then add them to the saucepan. Stir in the curry powder, broth and water. Bring to a boil, cover, and cook 2-3 min. Add salt and pepper to taste.Purée the soup in a blender.

Panini:

  1. At the same time, prepare the paninis with the rest of the ingredients. Ladle the soup into bowls and serve with paninis. If desired, garnish each bowl with a dollop of cream.
