Ingredients

28 button (white) mushrooms, thinly sliced 400 g
4 tbsp lemon, freshly squeezed 1 1/4 lemon
2 tbsp extra virgin olive oil 30 mL
2 tbsp Italian parsley, fresh, finely chopped 10 g
1 clove garlic, minced
1 pinch salt [optional] 0.1 g
ground pepper to taste [optional]
40 g Parmesan cheese, shaved

Method

  1. Place all the ingredients except the cheese in a bowl. Toss well and adjust the seasoning.
  2. Serve on the plates. Using a mandolin or peeler, cut cheese shavings then add them to each plate.
