Ingredients

1/2 onions, finely chopped 100 g
1 clove garlic, minced
2/3 cup canned tomatoes (diced) 170 g
1 tbsp ground cumin 8 g
1 pinch cayenne pepper 0.2 g
1 tbsp dried oregano 2 g
1 tsp salt 4 g
1 tsp ground pepper 3 g
2 chicken breasts, boneless, skinless 600 g
1 2/3 cup red beans (canned), rinsed and drained 420 mL
1 cup frozen peas 120 g

Before you start

A slow cooker is needed to make this recipe.

Method

  1. Add the first 8 ingredients to the ceramic cooking pot, then mix well. Add the chicken and coat it well with the mixture.
  2. Cover the slow cooker with the lid and cook on 'low' for 6-8 h, or until the chicken meat is tender enough to be "pulled" apart easily with a fork. Alternatively, cook on high for 4-5 h.
  3. Take the chicken out of the pot, shred it then put it back into the pot. Add the beans and peas. Cover, then cook 10 additional min on 'high'.
  4. Serve.

Love the slow-cook recipes on this iste. They are all excellent. Served this one on tortillas with a salsa also from SOS Cuisine. They all loved it.
