8 cups red cabbage, shredded 650 g
1 onions, thinly sliced 200 g
1 tbsp canola oil 15 mL
1/3 cup maple syrup 85 mL
1/3 cup wine vinegar 85 mL
1/2 cup red wine 125 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Before you start

A mandolin or food processor will make slicing the cabbage easier.


  1. Slice the cabbage and onion. Heat the oil in a casserole dish to medium-low. Add the onion and cook until softened, with some stirring. Add the cabbage and other ingredients, cover and cook until cabbage is tender, about 1 hour, stirring occasionally.
  2. Adjust the seasoning and serve.
