Ingredients

4 cups celeriac 500 g
1/4 cup mayonnaise 60 g
4 tsp Dijon mustard 20 g
1/4 cup olive oil 65 mL
3 tbsp lemon juice, freshly squeezed 1 lemon
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Method

  1. Prepare the dressing directly in the serving bowl: add the mayonnaise, mustard, oil, and lemon juice, along with salt and pepper to taste. Mix well.
  2. Prepare the celeriac as the last step, to avoid discolouration. Peel and shred the celeriac then add it to the dressing and toss.
  3. Adjust the seasoning then serve.
