Lentil Salad with Avocado

4 tomatoes, Roma type 280 g
1/2 red onions, finely chopped 80 g
4 cups mixed greens 100 g
2 tbsp lemonjuice, freshly squeezed 3/4 lemon
3 tbsp extra virgin olive oil 45 mL
2 cups lentils (canned), rinsed and drained 500 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
2 avocados 340 g


  1. Put the tomatoes, onion and mixed greens in a salad bowl. Pour the oil and lemon juice over the vegetables. Season with salt and pepper.
  2. Rince and drain the lentils, then add them to the salad bowl. Toss well, and adjust the seasoning. Add the avocado slices then serve.
