Ingredients

2/3 fennels, finely chopped 220 g
1/2 green peppers, chopped 80 g
2 tbsp capers 18 g
1 tbsp olive oil 15 mL
4 anchovy fillets, finely chopped 16 g
3 tbsp tomato paste 55 g
1 cup canned tomatoes (diced) 260 g
2 tbsp olive paste 30 g
1 dried chili peppers, minced 0.4 g
1 tsp ground pepper 3 g
1/2 tsp salt 3 g
1 tsp dried oregano 1 g
2 tbsp red wine 30 mL
1 tsp balsamic vinegar 5 mL
3 tbsp Parsley Base 45 mL
15 chicken thighs, boneless, skinless, cut into bite-size pieces 1 kg

Before you start

A slow cooker is needed to make this recipe.

Method

  1. Add all ingredients, except chicken to the ceramic cooking pot, then mix well. Add the chicken pieces and stir to coat them with the mixture.
  2. Cover the slow cooker with the lid and cook on 'low' for 6-8 h, or until the chicken meat is tender enough to be "pulled" apart easily with a fork. Alternatively, cook on 'high' for 4-5 h.
  3. Serve the chicken with the sauce.
