Ingredients

??? pineapple juice ???
??? lemon, for juice and zest ???
??? salmon fillet ???
??? brown sugar ???
??? ground cumin ???
??? ground ginger ???
??? gingerroot ???
??? garlic, minced ???
??? vegetable oil spray ???
??? lemons ???

Method

  1. Combine first 3 ingredients in a zip-lock plastic bag; seal and marinate in refrigerator for 1 hour, turning occasionally.
  2. Preheat oven to 400 °F degrees.
  3. Remove fish from bag; discard marinade.
  4. Combine brown sugar, chilli powder, lemon rind, cumin, ginger and garlic in a bowl. Rub over fish; place in an 11 x 7 inch baking dish coated with cooking spray.
  5. Bake at 400 °F for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon.
