Apple Enchiladas

Ingredients

6 wheat tortillas, large 14 oz
1 tsp ground cinnamon 0.2 oz
1/3 cup margarine non-hydrogenated 2.7 oz
1/2 cup sugar 3.9 oz
1/2 cup brown sugar 3.5 oz
1/2 cup water 4.2 fl.oz

Method

  1. Preheat oven to 350° F.
  2. Spoon fruit evenly onto all tortillas. Roll up tortillas and place seam side down on lightly greased 8"x 8" baking pan
  3. Combine margarine, sugars and water in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes
  4. Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired
  5. Bake for 20 minutes
