Ingredients

25 Graham crackers, crumbled 180 g
1 pinch salt 0.1 g
2/3 cup butter, unsalted 140 g
1 tbsp sugar 12 g
4 eggs size large
3 tbsp tapioca flour/starch, or cornstarch 26 g
3/4 cup unsweetened coconut milk 190 mL
3/4 cup lime juice, freshly squeezed 6 1/2 limes
1/2 cup brown sugar 100 g

Method

  1. Preheat oven to 350°F/175°C.
  2. Combine graham-cracker crumbs, 1/3 cup butter (75 g), sugar and a pinch of salt in a medium bowl; mix well. Press into a 9-inch (23 cm) pie dish, and bake until lightly browned, about 15 min. Remove from oven, and transfer to a wire rack until completely cooled.
  3. Beat the eggs in a bowl. In another bowl, dissolve the cornstarch and coconut milk then add to the eggs. Mix well and set aside.
  4. In a saucepan, add the lime juice, zest, brown sugar, and remaining butter. Cook over medium heat without boiling, until the sugar dissolves. Add a bit of this preparation to the egg mixture to warm it up. Pour the egg mixture into the saucepan and cook, stirring constantly, paying attention not to let it boil. Cook until the cream thickens and coats the back of a spoon, about 5 min. Let it cool. Pour filling into the crust and chill for at least 4 hours in the refrigerator.
  5. When ready to serve, garnish with key slices or sprinkle with grated zest. If desired, add rosettes of whipped cream.
