Lettuce Salad with Cucumbers and Radishes

Ingredients

1 cucumbers, medium size, thinly sliced 260 g
1/3 curly leaf lettuce, or Boston 120 g
2 radishes, thinly sliced 30 g
1 green onions/scallions, thinly sliced
2 tbsp Classic Vinaigrette 30 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Method

  1. Prepare the cucumbers: sprinkle them with salt and let drain a few minutes, then slice them thinly and put the slices in a salad bowl.
  2. Trim the lettuce leaves, rinse them and spin-dry, then add them to the bowl. Slice the radishes and scallions thinly, then add them to the salad.
  3. Pour in the Classic Vinaigrette, add salt and pepper to taste, then toss. Serve immediately.

There's nothing special about the salad recipe. I would have appreciated some recommendations of fresh herbs (beyond the boring green onions) to liven it up. But it is a good accompaniment to a main dish that features tomatoes.
