1 pineapple, thinly sliced 2 kg
1/2 cup fresh mint, finely chopped 26 g
4 tbsp sugar 50 g

Before you start

A blender or food processor will be very useful to make the mint sugar.


  1. Trim the pineapple, removing all the 'eyes' or small brown spots. Cut off its bottom part and stand it upright. Cut thin slices from all four sides till you reach the core. Arrange these slices onto a plate.
  2. Pulse the mint and sugar together in a food processor until finely ground. Sprinkle the mint sugar over the pineapple slices.
  3. Chill at least 1 h in the refrigerator before serving.
