Ingredients

45 pitted dates 2 cups
1/4 cup canola oil 65 mL
2 tbsp maple syrup 30 mL
1 1/2 cup white flour (all purpose) 190 g
1 cup rolled oats 100 g
1 pinch salt [optional] 0.1 g
1/2 tsp gingerroot, grated 2 g
1/2 tsp ground cinnamon 2 g

Before you start

A blender or food processor will be very useful for this recipe.

Method

  1. Preheat the oven to 190°C/375°F. Line a baking sheet with parchment paper.
  2. Soak the dates in boiling water for 5 min, then drain them and transfer to a blender.Stir in the syrup and oil, then mix well.
  3. Add the oats, flour, salt, grated ginger, and cinnamon, then process until a well-blended purée forms.
  4. Using an ice cream scoop, form 12 balls then transfer to the prepared baking sheet. Using a fork, press lightly on each ball to flatten it.
  5. Bake the cookies in the middle of the oven until they turn light brown, about 12-15 min. Let the cookies cool on the sheet for 20 min. before serving.
