Ingredients

2 Belgian endive (Witloof) 300 g
1/2 tbsp butter, unsalted 7 g
1/2 tbsp olive oil 8 mL
1/4 tsp sugar 1 g
1 pinch salt [optional] 0.2 g

Method

  1. Prepare the Belgian endive: keep them whole.
  2. Heat the butter and oil in a pan over low heat, then add the endive. Add the sugar and salt to taste, then cover and cook over very low heat, turning the heads of endive occasionally, until they are very tender and caramelized all over, about 30 min.
  3. Remove the lid and cook over high heat just long enough to evaporate some of the excess liquid. Serve with the juices.

I had a bag of endives in my fridge and tried this recipe with not much hope. What a pleasant surprise: 2 servings of vegetables, only 60 cal and plenty of flavour! Will not serve the kids, but this was a good side dish for hubby and me.
