Ingredients

2 cups green/snap beans 200 g
2 tsp fresh tarragon, chopped 1 g
1 tbsp olive oil 15 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Method

  1. Prepare the green beans and blanch them 7-8 min. Drain and shake out the water. Set aside.
  2. Heat the oil in a skillet, over medium heat. Add the beans. Sauté 2-3 min with stirring. Add the finely chopped tarragon. Cook an additional 1-2 min with stirring so that the beans are coated well with tarragon. Add salt and pepper.
  3. Serve warm.

Observations

Be careful with the amount of fresh tarragon, since it may be overpowering.
