4 parsnips, peeled then cut into large pieces 380 g
ground pepper to taste [optional]
1 pinch salt [optional] 0.4 g
2 tbsp extra virgin olive oil 30 mL
2 tsp honey 14 g
1 tbsp herbes de Provence 2 g


  1. Preheat the oven to 205°C/400°F.
  2. In a bowl, mix the honey with the oil, then add the parsnip pieces and coat them well with the mixture. Spread the pieces on a baking sheet previously covered with baking paper. Sprinkle with the herbs, salt and pepper.
  3. Roast in the middle of the oven until the pieces are tender and golden, about 20 min. Turn once halfway through cooking.
  4. Serve.
