Caramelized Peaches

1 can (400 mL size) peaches (with syrup)    
2 tsp creamy soy preparation for cooking   10 mL
1 tsp lemon juice, freshly squeezed   1/4 lemon
2 tbsp pistachios, shelled, unsalted   16 g


  1. Take the peaches out of the can, drain them, reserving the syrup then set them aside.
  2. Pour the peach syrup in a pan and reduce over medium heat 6-7 min until it is lightly caramelized and golden-coloured. Add the peaches to the pan and cook 2-3 min, then add the soy cream and lemon juice. Cook an additional 1-2 min. Let the peaches and syrup cool down a few minutes, then transfer all to a bowl, cover and chill in the refrigerator at least 1 hour before serving.
  3. Spoon the peaches into cups, sprinkle the pistachios on top, and serve.
