Ingredients

6 baby carrots, whole 180 g
1 tbsp margarine non-hydrogenated 14 g
3 tbsp water, approximately 45 mL
1 tbsp lemon juice, freshly squeezed 1/2 lemon
salt [optional]
ground pepper to taste [optional]

Method

  1. Put the carrots in a pot or a pan, just large enough to keep them in a single layer (or two layers, maximum).
  2. Add the margarine, lemon juice, and water to a depth of about ½ cm. Season with salt and pepper. Bring to a boil, then cover and simmer over low heat until the carrots are cooked al dente, about 10 min.
  3. Serve the carrots with the remaining cooking juices.
