Ingredients

1 chicken breasts, boneless, skinless   300 g
2/3 cup milk, partly skimmed, 2%   170 mL
1/4 cup Cognac, or brandy   65 mL
1 tbsp cornstarch   8 g
2 tbsp butter, unsalted   28 g
1 pinch salt [optional]   0.1 g
  ground pepper to taste    

Before you start

Keep the serving plates in the oven at the lowest setting so they are warm when you serve.

Method

Marinate

  1. Slice each breast horizontally into 2 cutlets. Put in a bowl, cover with milk, and put in the refrigerator for at least 3 h.

Cook

  1. When ready to cook, drain the cutlets and coat with cornstarch.
  2. Melt the butter in a pan over medium heat. Add the cutlets and sauté both sides quickly, 3-4 min total. Pour in the Cognac, cover, and cook 5-6 min. Add salt and pepper to taste.
  3. Serve on the warmed plates.
